Fantastic Summer Mock Tails

These mock tails are fantastically refreshing and a real treat in the hot, summer days! I have tried to create two different tasting drinks which have great and unusual flavours.  My kids love these and I don’t feel guilty as these have no added sugar and are made out of seasonal, fresh fruits! If you wanted to make them for a special occasion you can add any alcohol in it to make them into cocktails.

All these mock tails will make approximately two medium sized glasses.

Apple Delight

  1. 1 Gala Apple
  2. 1 inch Stick Ginger
  3. 2tsp Fresh Thyme
  4. ½ Lime Juice
  5. Ice
  6. Lemonade- enough for 2 glasses
  7. Water ¼ Cup

Method

Blitz all the above ingredients, apart from ice and lemonade, in a juicer or blender until smooth. Sieve the mixture into a glass. Take two cocktail glasses and spoon in the ice and half of the apple juice. Pour some lemonade and serve with a few pieces of apples inside.

Very cooling and refreshing!!

Strawberry Surprise

  1. 6 Fresh Strawberries
  2. 1tbsp Fresh Mint
  3. 3tbsp Grenadine Syrup (Pomegranate Syrup)
  4. Just over ½ Cup Water
  5. ½ Lime Juice
  6. Ice

Method

Blitz all the above ingredients in a juicer or blender, apart from the ice. Blend thoroughly until smooth. Take your glasses and spoon some ice, then pour the strawberry juice. Serve with some mint leaves and a slice of lime.

Mango Spice Shake

Mango Spice Shake

This is a lovely twist to a Mango shake. It has a bit of spice and a nice cool scoop of ice-cream, which makes it a lovely summery drink.

Mango Spice Shake

  1. 2 Small Mangoes preferably Alphonzo or Kesar
  2. 1tsp Cardamom Powder
  3. 1tsp Freshly Grated Nutmeg
  4. Cold Water- Enough to loosen the Mango Pulp
  5. Vanilla Ice cream

Method

In a juicer or blender add the above ingredients apart from the ice-cream. Blend until smooth. The consistency should not be too thick as you will be sipping and easting it from the glass. Add more water if this happens.  Pour into serving glasses and add a good dollop of vanilla ice cream inside and grate some nutmeg on top to decorate. Have some spoons ready to eat the mango and ice cream, then just sip!
