Quick Chilli Paneer Stir Fry

This is a lovely starter which tastes delicious. It is very quick to make and has similar flavours to chilli paneer but this dish is not as saucy as chilli paneer. It has a slight sweetness which goes very well with the garlic and chilli.

Serves 4

Ingredients

  1. 2 Blocks Paneer- Approx 10oz in a Block
  2. 2tbsp Oil
  3. 1 Red Pepper/Capsicum- Sliced quiet thick
  4. 1 Green Pepper/Capsicum- Sliced quite thick
  5. 8 Spring Onion-Chopped
  6. 3 Cloves Garlic- Crushed
  7. 3 Green Chillies- Sliced Long ways
  8. 2tbsp Soy Sauce
  9. 1tbsp Chilli Sauce
  10. 2tsp Honey

 Method

Cut the paneer into cubes. Take a wide non stick wok and the oil and paneer. On a high heat start to stir fry the paneer gently stirring. Add the soy sauce, chilli sauce and honey and stir fry for a few minutes. Take the paneer out onto a plate and add all the other ingredients into the wok. Again on high heat cook the vegetables until semi soft. Do not overcook or else the dish will not taste good. The peppers must have a bite to them. Add the paneer to the vegetables and gently mix. Turn the heat off. Serve hot. Yummy!

Paneer in a Green Sauce

Paneer in a Green Sauce

This a finger licking dish and is great served as a starter or a main dish. The green sauce is made with lots of fresh coriander which brings out a different taste in the Paneer.  Other ingredients include spinach and fenugreek (optional) and hence the green sauce. With this marinade you can also cater for non-vegetarians simply by omitting the Paneer (Indian cheese) and using Chicken instead follow Chicken in a Green Sauce Recipe.

Serves 4-6

You Will Need For the Marinade

  1. 2 Blocks of Paneer/20 oz, Cut into Cubes
  2. 2tsp Garam Masala
  3. 2tsp Turmeric Power
  4. 6 Cloves Garlic (crushed)
  5. 2tbsp Ginger Paste
  6. Approx 3tsp Salt
  7. 3tsp Thana Jeera (Coriander and Cumin Powder)
  8. Juice of 1 Lemon

 Method

Marinade all the above ingredients with the paneer for a minimum of 1 hour. The paneer will absorb all the flavours and will bring out a better taste.

To Cook the Paneer, You Will Need

  1.  1tbsp Oil
  2. 1tbsp Butter
  3. 2tsp Cumin
  4. 1tsp Freshly Grounded Pepper
  5. 2 Fresh Green Chilli (finely chopped)
  6. 1 Onion- chopped
  7. 2tbsp Tomato Puree
  8. 2 Cups Fresh Chopped Fenugreek Leaves (optional instead you can add more spinach)
  9. 2 Cups Chopped Spinach (you can use frozen chopped spinach as well)
  10. 2tsp Sugar
  11. 1tbsp Fresh mint or Mint Sauce

To Cook

Take a wide bottomed pan and add the oil and butter. Once the butter starts to melt, add the cumin. Let it sizzle, and then add the onion and chillies. Cook on low heat until the onions start to take on a golden colour. Once this starts to happen, add the grounded pepper, fenugreek and spinach. Cook for a few minutes. If you are not using fenugreek, then add more spinach. Add the tomato puree and again cook for a few minutes, stirring in-between.

Simply stir for a few minutes. Add the sugar and mint at this stage. Cook the paneer until Golden in colour.

Taste the paneer when cooked and add more salt if preferred.

Serve on its own or with chapatti or rice. Delicious!!

Wow! You have got to try this Desi Pizza. When I first made this chilli Paneer pizza, I was very unsure on how the taste would come out but as soon as I started to assemble all the ingredients onto the pizza, I knew this is the ultimate one!! If you like a good spicy feel to the pizza, well this is definitely the one to try. The marinated paneer gives a very unusual flavour to the pizza but it works extremely well with all the other ingredients.

This is definitely a speciality which all the family will love!

Makes 4 Pizzas

For the Marinade you will need:

  1. 1 Block /10 Oz of Paneer  –  Cut into small cubes
  2. 2 tsp Tomato Puree
  3. 2 tsp Tabasco Sauce
  4. 2 Clove Garlic, Crushed
  5. 2 tsp Chilli Sauce
  6. 1 tsp Dried Oregano
  7. 2 Green Chilli, Finely Chopped
  8. Salt to Taste
  9. Freshly grounded Pepper

Method

Marinade all the above into a bowl for at least one hour. Once this has marinated, add 2 tbsp of Olive Oil and mix. Transfer the paneer into a baking dish and cook in a pre heated oven at 180c for 15 minutes or until it starts to take on a slight colour.  This will take away the rawness of the paneer when added onto the pizza.

Once the paneer has cooked, leave aside to cool.

Ingredients to Make the Pizza Sauce:

  1. 2 tbsp Olive Oil
  2. 1 Clove Garlic, Finely Chopped
  3. 1 Tomato Can, 400g (blended)
  4. Pinch of Dried Mixed Herbs
  5. Salt to taste
  6. ½ tsp Sugar

Method

Take a pan, add the olive oil and the garlic and let the garlic sauté only for a minute or two. Add all the other ingredients and let the sauce cook on low to medium heat. Cook the sauce until it becomes thick and reduces in half. Let it cool.

To Make the Pizza Base (makes 4 pizzas) you use:

  1. 1 lb Self Rising Flour
  2. ½ sachet Ready to Use Yeast
  3. Salt
  4. A Good Handful of Cheddar Cheese
  5. 2 tsp Ghee/or Olive Oil
  6. Approx 200 ml Water

Method

Put all the ingredients for the pizza base in a bowl apart from the water. Give this a mix, and then add the water gradually until you form dough that is NOT too sticky as you will need to roll it out. Adding the water gradually will give you an idea of whether you need to add all the water or not. Once the dough has come together nicely, knead it for a few minutes.

Let this dough sit for a while until it has risen.

Take the dough out and make it into a large ball. Divide the mixture into four equal balls. Then in turn roll out each one to the thickness that you wish. Some people prefer a thicker base and some thinner.

Then you are ready to add the toppings.

The Toppings (For 4 Pizzas)

  1. The Cooked Paneer
  2. The Tomato Sauce (Which you cooked earlier)
  3. 1 Red Pepper (finely sliced)
  4. 1 Green Pepper (finely sliced)
  5. 1 Onion (finely sliced)
  6. 2 Handfuls of Freshly Chopped Coriander
  7. Chilli Flakes
  8. 1 Cup Cheddar Cheese (grated)
  9. 2 Cup Fresh Mozzarella Cheese (grated)

Assembling the Pizza

Take the ready rolled pizza base; spread some of the tomato sauce evenly.

Dot the paneer cubes over the whole pizza base, sprinkle  some red chilli flakes, add both the cheeses on top.

Then goes the red and green pepper , some sliced onion and finally some chopped coriander.

Before you put it in the oven to cook, sprinkle some olive oil all over the pizza. This will give it a nice glossy finish and the pizza will not look dry when it comes out.

Cook in the oven on 180c until the pizza has cooked and has taken a golden colour. Takes approximately 10-15 minutes.

Ready to eat!

Paneer Bhurji

Serves 4

This is a great Paneer recipe, which requires no deep-frying. It is quick and delicious and can be eaten as a snack or as a main meal. Paneer is a type of cheese which is widely used in Indian cooking. In this recipe, I have used shop bought Chapatti but you can make your own chapattis, just make them slightly thicker and large. You can also use Tortillas if you wish.

Ingredients

  1. 1 Block of Paneer / 4 Cups of paneer (Grated)
  2. 2tbsp Butter
  3. 1 Medium Onion
  4. 2 Big Cloves of Garlic
  5. 2tsp Ginger puree
  6. 1 Red Pepper
  7. 1 Green Pepper
  8. 3 Medium Sized Tomatoes
  9. 1 ½ tbsp Dhana Jeeroo powder (Coriander seeds and Cumin Powder)
  10. 2tbsp Tomato Ketchup
  11. 2 Green Chillies
  12. 2tsp Garam Masala Powder
  13. 1 ½ Handful Chopped Coriander
  14. Salt to taste

Method

Take a wide bottomed pan, add the butter. Finely chop the onion and garlic using a food processor. Add this to the butter along with the ginger paste. Sauté the onions on low heat, until the colour of the onions change to a lovely golden brown.

Whilst the onions are cooking, slice the peppers  in a julienne style (very thin small strips) or you can chop the peppers in a food processor making sure that you get a finely chopped consistency but not too watery. Leave aside. Grate the tomatoes. Then add the peppers and tomatoes to the onions. Add all the other ingredients but NOT the grated Paneer. Mix thoroughly and taste for salt. Add more if needed.

Leave this to cook on a low heat until the butter separates from the tomato mixture and the water has evaporated. Once this has happened add the Paneer. Cook this for a few minutes and add a good knob of butter at the end.

Serve this rolled up in a Chapatti or a Tortilla.
